Marou Tien Giang. 70% cocoa from Trinitario beans. These come from the Cho Gao district in Tien Giang, Vietnam. Marou also makes its chocolate entirely on-site, in Ho Chi Minh City (formerly Saigon).
Fruity, spicy.
"Tien Giang has a smoky roast flavor that tasted initially quite strong. Other flavors that soon came forth included a complex spice with pepper, a fruit flavor that contained prune, and a sweetness that seemed to be a cross between honey and toffee.
From holding the bar to the last piece, this is a bar to savor.
Vietnam, not exactly an obvious cocoa country, but nevertheless... the best cocoa bean varieties have also been discovered there.
A French duo developed these single-estate chocolates with eccentric flavor profiles from the region.
